This specific recipe calls for thick white noodles which usually refers to wheat noodles or Udon. You could also use Somen noodles.

Here are the steps to making this dish. Don't forget to keep sipping on water while making this, so you can hydrate as required for the day.

Get the ingredients:

Noodles 

1 tablespoon cooking oil

1 cup Bok choy

2 cups Chinese broccoli

1 cup black fungus

1 cup broccoli florets

1 cup snow peas

500 grams fresh prawns

Dash of black vinegar

Sesame oil

Shanghai noodle sauce 

Make the dish:

1. Dip the fresh noodles in the stock for 2 minutes until cooked – remove from stock and strain.

2. Blanch all the vegetables (bok choy, black fungus, broccoli, baby corns and carrots) which is basically putting them in boiling water, draining them before putting them in an ice bath. 

3. Cook the prawns in the boiling stock for 15 seconds or until tender crisp. Make sure the prawns are cooked

3. In a clean medium hot wok, cook the vegetables for 15 seconds to release the aroma.

4. Add the sauce to the vegetables and bring to quick boil.

5. Add the noodles and prawns, toss and cook until noodles are hot and all sauce is absorbed.

6. Finish with some sesame oil and black vinegar.
