Ingredients
For the salad
750 ml water
1 tbsp butter
250 g couscous
2 large peaches, pitted and cut into slices
2 tbsp olive oil
To serve
225 g blueberries
2 springs onions, green tops only, sliced
2 tbsp sultanas
Method
1. For the salad, bring the water, butter and a pinch of salt in a saucepan and bring to a simmer over a moderate heat, stirring to help dissolve the butter.
2. Add the couscous, stir briefly, and remove from the heat. Cover and set aside for 10 minutes.
3. Meanwhile, preheat the grill to hot. Brush the peaches slices with olive oil on both sides and then arrange on a grilling tray. Grill for 4-5 minutes, turning once, until lightly charred on both sides.
4. Fluff the couscous with a fork to separate the grains.
5. To serve, divide the couscous between four serving bowls. Top with blueberries, spring onion greens, sultanas, and the grilled peach slices.
