Ingredients
250g Oreo biscuit (centre cream removed)
175g unsalted butter, melted
180g white marshmallows
180ml milk
1/8 tsp orange food colourant
100ml Qamardeen syrup
600ml cream
Method
1. In a food processor, blend the Oreo biscuits into fine crumbs.
2. Put the crumbs in a bowl and mix in the melted butter.
3. Place the crumb mixture in a pie dish. Make an even layer on the bottom of the pie pan. Place in the fridge to set for 30 minutes.
4. Melt the marshmallows in the milk over a low heat while stirring. Remove from the heat.
5. Stir in the orange colourant and Qamardeen syrup. Colour should be light orange (if you want a darker orange, add more colourant). Set aside to cool for 10 minutes.
6. Whip 300ml of the cream with a hand mixer to soft peaks. Fold the whip cream into the marshmallow mixture.
7. Pour the mixture on to the Oreo base. Place in the fridge to set for about two hours.
8. When the pie has set, whip the remaining cream to medium peaks and spread on top of the pie and serve.
