Peanut butter cookie

Makes 12 cookies

Ingredients

1 stick (8 tbs) unsalted butter, room temperature

½ cup peanut butter (chunky or smooth, not natural)

½ cup light brown sugar

½ cup granulated sugar, plus more for sprinkling

1 large egg

1 ¼ cups all-purpose flour

½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

Steps

Preheat the oven to 162C.

In the bowl of an electric mixer, cream the butter, peanut butter, and sugars together until fluffy.

Add the egg and the dry ingredients and mix until smooth.

Roll the dough into a log (5cm thick and 20cm long) and use a knife to make 1.9cm-thick slices.

Coat two cookie sheets with non-stick cooking spray or line them with parchment paper. Place the cookie slices on the sheets.

Using the back of a fork, flatten the cookies and make the classic crosshatch design (press hard). Then sprinkle lightly with granulated sugar.

Bake for 15 to 18 minutes, or until light brown. Cool and serve.
