Art: New Exhibition at NYU Abu Dhabi

Check out the Art Gallery at NYU Abu Dhabi to see their new exhibition show at the Project Space. It opened to the public on November 13, Learning from Gulf Cities is the culmination of a long-term collaboration between university professors and scholars Harvey Molotch (New York University) and Davide Ponzini (Politecnico di Milano), with architectural photographer and urban studies scholar, Michele Nastasi. In their dual roles as receivers and transmitters of contemporary urban trends, cities like Dubai, Doha, and Abu Dhabi increasingly influence the shape of places beyond the Gulf and the region. This exhibition challenges depictions of Gulf cities as insular, insubstantial or merely flamboyant imitators, and instead portrays them as both originating, as well as reflecting, what is happening in the wider urban world.

Staying in?

Not up to braving the crowds in Dubai?

Stay home and cook: Emirati seafood biryani

  • Preparation time:   10 minutes
  • Cooking time:   45 minutes
  • Total time:   55 minutes
  • Serves:  4-6

Ingredients

  • 300g medium shrimps, cleaned
  • 300g lobster meat, cleaned and chopped into chunks
  • 200g calamari rings
  • 100ml oil
  • 3 onions, thinly sliced
  • 6 garlic cloves, crushed
  • 6-8 curry leaves
  • 2 tbsp turmeric
  • 2 tbsp cinnamon powder
  • A few cloves
  • 3 dried lemons (loomi)
  • 3 tomatoes, sliced
  • 1 tbsp tomato paste
  • 4 cups basmati rice, wash and soak in water for 2 hours
  • Coriander, chopped, for garnishing
  • Cashews, fried, for garnishing
  • Salt

Preparation

  1. Sprinkle salt over seafood. In a large heavy-bottom pan, heat oil and on high heat sauté seafood until slightly brown. Using a slotted spoon, remove from oil and set aside.
  2. Add onion, garlic, curry leaves, turmeric, cinnamon and cloves to oil. Sauté until onion is golden brown. Add lemons, tomatoes and tomato paste. Sauté until oil begins to appear on sides of pan.
  3. Add sautéed seafood and adjust seasoning. (It should be a little on the salty side as rice will absorb it.) Add 4 1/2 cups of warm water and bring to the boil. Cover and boil gently for 5 minutes to 7 minutes.
  4. Drain rice from soaking liquid and add to pan. Do not stir. Cover and simmer for 10 minutes then stir once.
  5. When most liquid has been absorbed, cover pan with a damp cloth to absorb moisture, and then place the lid securely on top. Keep the pan over very low heat, then shake it after 10 minutes to 12 minutes. After 20 minutes, remove from heat, let it rest with the lid on until ready to serve.
  6. Garnish with coriander and fried cashews, mix gently and serve.
